An Easy Spanish Rice Vegetarian Recipe



I tried for years to perfect a good Spanish rice with brown rice with out success. Then at an in-laws wake a delicious version was served, using white rice. This modified version is an easy vegetarian recipe.

Ingredients:

  • 4 Cups brown Rice (I use Uncle Ben’s 30 brown minute rice)
  • 1 28 oz bottle (or so) of your favorite spaghetti sauce
  • 7 1/2 Cups of water
  • 1/8 – ¼ teaspoon of cayenne (optional)
  • 2 teaspoons of chicken style season (no MSG) (this is my favorite seasoning)
  • ½ cup honey
  • ½ teaspoon thyme

Stir the rice in a big pot (stainless steel best) for a few minutes on low till lightly brown or you get bored (smile).

  • Add 1 Tablespoon Olive oil and stir
  • Add the spaghetti sauce and add the water (use some of the water to rinse the spaghetti sauce bottle first and add to rice)
  • Add the seasonings and honey
  • Increase heat to high and bring to a boil
  • Stir rice mixture, reduce heat to low and cover (do not stir the rice again)

Should take about an hour, however start checking after ½ hour (temperature maybe to high).

Water should be completely absorbed.

May be eaten right away, however it is best refrigerated and reheated later, the grain can be mushy when first cooked.

This spanish rice recipe is my favorite rice dish, but my husband's is lentils and rice.
