Lentils and Rice
This lentils and rice recipe was the first rice recipe I cooked after becoming a vegetarian. It has changed a little over the years and it’s another easy vegetarian recipe made with brown rice.
The Ingredients:
- 1 cup rice
- 1 ½ cup brown lentils, rinsed
- 4 ½ cup water
- 2 teaspoons salt
- 2 teaspoons onion powder
- 1 teaspoon garlic powder
- 1 15 oz can tomato sauce or 2 8 oz cans
- 2 heaping teaspoons of sweet basil
- 2 teaspoons of honey
Wash lentils, drain and combine all ingredients in a pot, bring to a boil, reduce heat to low, cover and simmer for about 1 hour, or until water is completely absorbed.
This Lentils and rice recipe is my husband’s favorite, my favorite is Spanish rice.
